adaptable ayurvedic fruit cobbler

As someone who likes to eat healthy, but also has a sweet tooth, this recipe quickly became a favorite in my book. Its quick and easy to throw together for company, or to take to a pot luck, AND you can make it with whatever seasonal fruit you have on hand.

Ingredients

5 cups of seasonal fruit*
¾ cup rolled oats
¾ cup almond flour
¼ cup shredded coconut
1 tsp ground ginger
¼ tsp Himalayan mineral salt
3 TBS maple syrup
3 TBS coconut oil, melted

Method

  • Preheat the oven to 350º. Grease an 8-inch square baking dish with coconut oil. Place the blueberries and peaches in the greased baking dish.

  • In a mixing bowl, use a fork to combine the almond flour, oats, coconut, and ginger, breaking up any clumps as you go. Add the maple syrup and coconut oil and mix until just combined.

  • Crumble the almond and oat mixture evenly over the fruit.

  • Bake for 35-45 minutes, or until the fruit is bubbly and the topping begins to brown. Serve warm.

* Try peaches + blueberries, apples + pears, mixed berries, just apples - whatever is seasonal and you have on hand.
