almond date balls

This recipe is inspired by the Himalayan Institute's earthballs, which are part of my daily afternoon ritual when I am there, along with an HI Chai. They feature the sweet taste, making Almond Date Balls balancing for vata and pitta.

  • 1 cup almonds. soaked, peeled, and roasted with a pinch of coarse salt

  • 6-10 medjool dates. remove the pits

  • ¼ tsp cardamom

  • ¼ tsp clove

  • ¼ tsp star anise

  • ¼ tsp allspice

  • 1 tsp cinnamon

  • 1 TBS tahini

  • 1/3 cup finely shredded coconut. toast and use for coating the balls

    variations: add ¼ cup raisins or dark chocolate chips.

    Blend almonds, 6 dates, spices, and tahini in food processor. Check texture by hand rolling a ball. Mixture should be moist enough to hold together when rolled into a ball, if needed add additional dates. Before rolling the remaining balls, hand-stir in the optional raisins or chocolate chips. Roll finished balls in toasted coconut. Refridgerate to store. Enjoy! 

    Makes about 2 dozen delicious treats.
