The perfect companion for kitchari. Chutney is often overlooked or left out, but this quick and easy recipe is sure to add excitement to your next kitchari dish!

The cooling properties of cilantro and coconut make this an ideal chutney for the summer months, when Pitta is burning bright. Blend all ingredients and add a spoonful to your kitchari to add a splash of color and flavor.

Ingredients

1 bunch fresh cilantro
¼ cup water
¼ cup fresh lemon juice (or lime juice if Pitta is high)
¼ cup grated coconut
2 TBS fresh ginger root, chopped
1 tsp raw honey
1 tsp Himalayan mineral salt

Method

  • Blend or food process the fresh cilantro, water, and lime until the cilantro is chopped.

  • Add remaining ingredients until mixture forms a paste-like consistency.

  • This can be stored in the refrigerator for up to one week.

  • For a silkier texture use only the leaves and the tops of the fresh cilantro stalks.
