Raw cacao (as opposed to fermented) makes Pitta happy (ferment = sour, and sour aggravates Pitta), and the use of essential oils lends to the smoothness and evenness of flavor throughout each bar. They are free from any dairy or refined sugar and are sweetened with only honey.
